For a super easy and delicious raw meal these ‘Almost’ Summer Rolls hit that spot, even when you are super hungry. When I say almost, it means that Summer over in the UK is almost here!
They are very easy to make.
Take vegetables such as carrots, peppers, cucumber, mushrooms, avocado and cabbage leaves (or romaine or large lettuce leaves). The leaves are for rolling up the filling instead of the typical Vietnamese style summer rolls that are made up with white rice – which is not that healthy!
Chop up the vegetables into juliene style sticks. I also added some pineapple which made it even yummier. Basically there are so many things you can put in these, its really down to your own imagination.
When you are done, take a leaf and and place a few sticks of each vegetable and roll up, then dip into sauce.
You can either make a guacamole, sweet chili sauce, braggs or soy sauce. Whatever you like really!
This is a recipe that is very inexpensive to make and doesnt take more than five minutes.
